When you have kids and you want them to be adventurous eaters I suggest going bi and swinging both ways. I don’t cook two different meals. I just make one that’s kid-friendly and then once I’ve got my daughter’s portion taken care of I sex it up for the adults.
Last night’s burritos were a success.
First, the kid-friendly version.
8 ounces ground pork or ground turkey
onion
green bell pepper
1 large minced clove garlic
lime juice
1 tbsp chili powder
1 tbsp cumin
salt to taste
pepper to taste
8 oz can diced tomatoes with juice (I like Muir Glen Organic. It’s very chunky.)
hot sauce (amt depends on your child–mine likes a little heat.)
Stir in 2 heaping spoon fulls of sour cream.
Wrap it up (I love La Tortilla Factory whole wheat tortillas)
I also add some shredded lettuce and avacado.
Sexed up version:
Do the same thing, but in a blender mix goat cheese, sour cream, and a few chipotle peppers in adobo sauce. Either spoon or stir mixture into the meat (I prefer stirring).
This would work with children, too, without too much (or any) chipotle.
Optional: Before eating try a Tequila Slammer. Put tequila and lemon juice into a chilled glass and stir to mix. Top with sparkling wine. Cover the glass with your hand, slam and swallow!
And sorry about lack of amounts on both food and beverage. I never measure so just go on your taste.
